These are just some of savory delicacies—utilizing locally grown and sourced ingredients where available—being prepared by chef extraordinaire Brian Sonoskus for the $25,000 Grand Prix Benefit Calcutta: a much-anticipated outdoor event to unveil the new state-of-the-art Equestrian Center at The Preserve at Little Pine. To find a chef worthy of such a lavish occasion the party organizers didn’t have to look far. In fact, they found him right in their own back yard, so to speak, in the quaint mountain town of Marshall. Chef Brian Sonoskus is head chef at downtown Marshall’s new Star Diner, an inviting and intimate fine-dining spot known for its casual, friendly atmosphere and excellent mountain-to-table cuisine.

A Mountain-To-Table Chef

Chef Brian is no stranger to success—or to Western North Carolina. He has 30+ years of restaurant experience, including serving as the longtime executive chef at the regional chain Tupelo Honey, which started in Asheville in 2000. “Over the years, I’ve grown very fond of Western North Carolina,” Brian says. “It’s home. It’s a great place to live. And its rewarding when I can contribute to events like The Inaugural $25,000 Grand Prix Calcutta, which not only brings recognition to the community, but the proceeds are being donated to the MANNA FoodBank—a great organization that fights to overcome hunger in the region.”

For years—even before it was trendy—Chef Brian has cultivated relationships with area farmers and growers, using seasonal vegetables and meats to create his ever-revolving menu at the Star Diner. It is this inspired approach that he is using to create the menu at The Grand Prix Calcutta. “Fall is a special time of year here,” Brian says, “and we are excited to bring some of the local seasonal favorites to this festive occasion. We have tried to include a little bit of everything—fruits, vegetables, meats, fish—foods that we think are indicative of the area and the state of North Carolina. It’s been a lot of fun and we look forward to people’s reaction—especially since many of these folks are from out of town. We hope it will be a treat for them.”

Thanks to Chef Brian, The Grand Prix Calcutta promises to be an occasion to savor—on many levels.
